Monte Carlo Biscuits

Monte Carlos are one of my favourite types of biscuits, but I'd never made my own before.I used the recipe by Taste and they where delicious!



     Ingredients

1/3 cup brown sugar1 teaspoon vanilla essence1 egg3/4 cup self raising flour1/2 cup of plain flour1/3 cup desiccated coconutRaspberry jam
Buttercream60g butter, softened3/4 cup icing sugar1/2 teaspoon vanilla essence

          Preheat the oven to 180° or 160° fan-forced. And line 3 baking trays with baking paper. 

                               
 Using an electric mixer, beat the brown sugar, butter and vanilla essence. Beat until light and fluffy.



Add an egg to the mixture and mix it until it's combined.

                                           
Sift in both kinds of flour and stir to combine. Then stir in the coconut.



Roll the mixture into little balls and place them about 3 cm apart. Lightly dip a fork in flour and 
lightly flatten each biscuit, making Criss-cross pattern on top.
Bake for 12-15 minutes, or until they are light golden. 
Wait for them to cool.


While this is happening make the buttercream. Use an electric mixer to beat the butter, icing sugar and vanilla.Then sandwich the biscuits with one teaspoon of buttercream and one teaspoon of jam.Then they are ready to eat!
